Recipe exchange

From my sister’s friend Annmarie:

Mississippi Mud Pie

3oz (75g) butter
6 oz (150g) crushed digestive biscuits
9oz (250g) white marshmallows
4 tablespoons milk
10oz ( 275g) milk cooking chocolate
300 ml ( half a pint) double cream
1 small carton natural yogurt
2 tea spoons of coffee dissolved in 1 table spoon of boiling water

Topping
150 ml (quarter of a pint) double cream, whipped
1oz (25g) chocolate, grated

Method

Melt the butter and mix with the crushed digestives. Press into the
bottom of a 20 cm baking tray or dish.

Put marshmallows in pan with milk over a gentle heat and stir until
melted. Leave to cool.

Melt the chocolate.

Whip the cream and then fold in the yogurt, melted chocolate,
marshmallow mix and the coffee. Blend until well mixed. Spread over
the base of digestives and leave to set.

Decorate the top with the left over whipped cream and grated chocolate.
