From my sister’s friend Jeannie:

Carrot and Orange Soup

Melt 2 oz butter in large pan.
Stir in 3 sliced leeks and 1 lb sliced carrots. Cook 10 mins (Or if you’re on a diet omit this stage with the butter!)
Pour in 2 pints chicken stock and 2 orange rind/juice.
Add 1/2 teaspoon nutmeg, salt and pepper.
Boil 40 mins (or 5 mins in pressure cooker)
Liquidise.
Add 2 tablespoons yogurt.
