Mango and Avocado Chicken (serves 4):

4 large chicken breasts (cut into strips)
4 Tbsp mild mango chutney
2 fresh firm ripe mangoes (chopped into bite-sized pieces)
2 fresh firm ripe avocados (“)
1 Tbsp groundnut oil or olive oil
Salt & pepper to season.

Put chicken in bowl with mango chutney & leave to marinate fro 10 mins
(ensuring chicken is well coated). Heat wok, add oil. When oil starts to
smoke, add chicken and marinade, stir-fry until chicken is cooked through.
Add mango pieces, stir fry for 2-3mins (until slightly softened & heated
through). Add avocado and stir carefully for 2 mins (until heated through
but still firm). Season to taste. Serve with rice or noodles.
