While decluttering I was very, very pleased to come across Mum’s recipe for Fridge Cake, in one of my student recipe scrapbooks.
4oz margarine (approx 1/2 200g block)
1 tablespoon sugar
2 tablespoons cocoa (I use drinking chocolate)
1 tablespoon golden syrup
8 oz finely crushed digestive biscuits (about 200g packet)
4 oz chocolate
Cream the margarine and sugar together, add the cocoa and syrup; mix well. Work in the biscuits until everything looks evenly distributed. Press into a container that is about 1″ deep and place in ‘fridge.
Melt the chocolate by putting somewhere warm as long as container is not going to melt, or put in a bowl that rests in a saucepan of boiling water. When metled, remove the mixture from the ‘fridge and pour over the chocolate; spread evenly and then replace in teh ‘fridge. Once set you can mark and cut the cake into squares, fingers or whatever. Store it in the ‘fridge between ‘eatings’.
