Recipe: Ras el-hanout

For the fruity lamb tagine, I made this spice mix (and will do so again).

I based it closely on the mix set out at

3 tsp black pepper corns
2 tsp ground ginger
2 tsp cumin seeds
1 tsp ground cumin
2 tsp ground nutmeg
1 tsp coriander seeds
2 tsp ground cinnamon
1 tsp paprika powder
1 tsp ground cardamom
1 1/2 tsp turmeric
1 tsp chili flakes
1/4 tsp cloves
2 tsp coarse sea salt

The only change that I made was that I used 2 tsp of ground cumin.

It made the kitchen smell wonderful, and stopped me wanting chocolate or something sweet/fatty – spicy food is great!
