Slow cooker recipe: Chicken and lentil curry

I shall be making this tomorrow – comes highly recommended by a colleague:

75g red lentils

2 tbsp mild curry powder
2tsp ground coriander
1 tsp cumin seeds
350ml chicken or veg stock
8 chicken thighs (skin removed)
225g spinach  – says chopped but I leave whole
salt and pepper
sprigs fresh coriander
Place lentils in sieve and rinse under cold running water
put into slow cooker along with spices and stock
cook on high for 2 hours
add chicken thighs (I mix them into lentil mix but exposed bits cook ok)
cook on high for 3 hours
add spinach and mix in
cook further 30 minutes until spinach wilted
stir in chopped coriander
season to taste and serve
