Recipe: Summer fruits in Lemongrass Syrup

This is from BBC Good Food in June 2006 – as I can’t find it on the website, reproduced here, so that I can find it again (having a paper clearout).

Serves 6

PREP 10 mins plus steeping NO COOK

Stir 375ml/13fl oz boiling water and 150g/5oz golden caster sugar together until sugar has dissolved. Bruise 2 lemongrass stals with a rolling pin, then drop into the syrup with 3 strips lemon zest. leave to cool, then remove lemongrass. Pour syrup over 750g/1lb 10oz mixed summer fruits. Stir to mix, steep for 30 mins, then serve.
